About Our Name

8AEES, pronounced simply “Eights.”

2 J’s blended form the 8 in 8AEES. One each for founders Jason and Jolisa Swanson. This distinctive mark encapsulates their commitment and shared vision.

The 'AEE' within 8AEES represents daughters: Adison, Emily, and Elizabeth, serving as reminders of the importance of family and the timeless practice of passing down values through generations.

​

The 'S' stands as tribute to the Swanson name. This single letter symbolizes the robust foundation upon which the distillery is firmly established.

​

Together these elements speak volumes to the Swanson family’s dedication to crafting excellence with every spirit and every bottle.

Located on the Southern Great Plains Terrior

Home to 8AEES Distilling Company, Shattuck, Oklahoma (where the wind blows) is known for its semi-arid dynamic weather patterns.

​

Being on the great southern plains provides Shattuck and 8AESS with an optimal environment for extracting maximum flavors from our charred white oak barrels and regional terroir.

​

The frequent year-round temperature fluctuations accelerate the maturation process by causing the barrel staves to expand and contract. This pushes our bourbon deeply into the wood capturing every available flavor. It is then drawn back into the barrel with the next temperature change. This process occurs several times a year giving our Bourbon a rich flavorful taste.​

Plains, Trains, and Windmills

​Windmills are iconic to Oklahoma’s landscape. They pumped the water from the Ogallala Aquifer that kept crops and cattle alive and supplied the water needed to power steam locomotives.  Those locomotives brought commerce and people to the area and the railroad junction of Shattuck was born. We are small, about 1200 people, a Windmill Park, the railroad, oil, gas and our distillery but like our windmills Shattuck is testament to resilience and resourcefulness.

Bourbon Beef Anyone?

As part of our farm and distillery operation, we've hired some Black Angus cattle as environmental stewards to assist with our spent mash.  To find out more about our Bourbon Beef availability, click this link.

The first recorded Bourbon distillery dates from 1783.  First Angus cattle imported to the United States arrived in 1873.   1783 & 1873? Coincidence? Yes.  But it is no coincidence that Angus cattle finished on 8AEES bourbon mash are unmatched in flavor and tenderness.

Spent mash or stillage is considered an industrial waste product in the distilling business.  Feeding this sticky wet, highly nutritious by-product to cattle solved how to dispose of it. The cattle find it flavorful and in turn Bourbon Beef is flavorful. Finishing our distillery herd on Bourbon mash provides rich marbling and a bold flavor you will simply not find in your grocery store.

Distilling and farming have a long, intertwined history. 8AEES strengthens that relationship further with our grain to glass spirits and farm to plate Bourbon Beef.  No Compromises.​
